The vast majority of people WILL easily fall prey to a good con artists - nuns or no nuns. Yes, and most real-world evidence supports that this is true. Attribute+Skill is better than Attribute+Attribute, both from a "realism" point of view as well as a game balanced mechanic. So, basically, this "Nunnery rule" is wrong. The other part of that is that nuns sleeping around is actually not unheard of and was in fact rampant in earlier times. "But the nun isn't about to sleep around!" defense would be modelled by the "Results would be disastrous" general social modifier, or the GM could outright determine there is no condition where the nun will sleep with the salesman (same as if a male character made an advance to a lesbian, or another heterosexual male - there just isn't a possibility of it succeeding). It is correct that the nun has poor defence against cons.
Switching to attributes would not make sense. The "innocent" nun (who has no Con) would have little means of protecting herself from the advances. If we go with the assumption nuns are socially inept (which is actually really, REALLY untrue, if you've ever dealt with nuns), then it is actually quite credible that a nun could fall prey to the sexual advances of a used drone salesman.
